Pasta Primavera Recipe

Ingredients:

  • 250 grams pasta (penne or spaghetti)
  • 1 cup broccoli florets
  • 1 cup sliced bell peppers (red, yellow, and green)
  • 1 cup sliced carrots
  • 1/2 cup sliced mushrooms
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup heavy cream or half-and-half
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions:

  1. Cook the Pasta:

    • Bring a large pot of salted water to a boil.
    • Add the pasta and cook according to package instructions until al dente.
    • Drain the pasta, reserving 1/2 cup of pasta water. Set aside.
  2. Prepare the Vegetables:

    • In a large skillet, heat olive oil over medium-high heat.
    • Add broccoli florets, bell peppers, carrots, and mushrooms to the skillet.
    • Sauté the vegetables for 5-7 minutes until they are tender-crisp.
    • Season with salt and pepper to taste.
  3. Combine Pasta and Vegetables:

    • Add the cooked pasta to the skillet with the sautéed vegetables.
    • Toss everything together gently over medium heat.
  4. Make the Cream Sauce:

    • Pour in the heavy cream or half-and-half into the skillet.
    • Stir well to combine, allowing the sauce to simmer for 2-3 minutes until it slightly thickens.
    • Add grated Parmesan cheese and stir until melted and well combined.
    • If the sauce is too thick, add a splash of reserved pasta water to loosen it up.
  5. Finish and Serve:

    • Remove the skillet from heat.
    • Garnish with halved cherry tomatoes and fresh basil leaves if desired.
    • Serve hot, garnished with extra Parmesan cheese if preferred.
