Pasta Primavera Recipe
Ingredients:
- 250 grams pasta (penne or spaghetti)
- 1 cup broccoli florets
- 1 cup sliced bell peppers (red, yellow, and green)
- 1 cup sliced carrots
- 1/2 cup sliced mushrooms
- 1/2 cup cherry tomatoes, halved
- 1/2 cup heavy cream or half-and-half
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil leaves for garnish (optional)
Instructions:
Cook the Pasta:
- Bring a large pot of salted water to a boil.
- Add the pasta and cook according to package instructions until al dente.
- Drain the pasta, reserving 1/2 cup of pasta water. Set aside.
Prepare the Vegetables:
- In a large skillet, heat olive oil over medium-high heat.
- Add broccoli florets, bell peppers, carrots, and mushrooms to the skillet.
- Sauté the vegetables for 5-7 minutes until they are tender-crisp.
- Season with salt and pepper to taste.
Combine Pasta and Vegetables:
- Add the cooked pasta to the skillet with the sautéed vegetables.
- Toss everything together gently over medium heat.
Make the Cream Sauce:
- Pour in the heavy cream or half-and-half into the skillet.
- Stir well to combine, allowing the sauce to simmer for 2-3 minutes until it slightly thickens.
- Add grated Parmesan cheese and stir until melted and well combined.
- If the sauce is too thick, add a splash of reserved pasta water to loosen it up.
Finish and Serve:
- Remove the skillet from heat.
- Garnish with halved cherry tomatoes and fresh basil leaves if desired.
- Serve hot, garnished with extra Parmesan cheese if preferred.
